Jamaican Jerk Chicken Wings

Jamaican jerk chicken wings are fresh chicken wings marinated in a hot and spicy jamaican style sauce. Wings are baked and served hot.
Ingredients -
 
3 pounds Fresh Whole Chicken Wings
3 fresh Jalapeno Peppers, chopped
1 teaspoon Freshly Ground Black Pepper
2 Garlic cloves, peeled and crushed
2 teaspoons Allspice
1 medium Onion, chopped
1 tablespoon chopped Fresh Thyme
2 tablespoons White Vinegar
1 tablespoon Sugar
1 tablespoon Salt
1/4 cup Vegetable Oil
1/2 cup Water
 
Preparation:
 

1. Puree jalapenos, pepper, garlic, allspice, onion, thyme, vinegar, sugar, salt, oil, and water in food processor or blender until smooth.

2. Place wings in large casserole or baking dish and cover with sauce.

3. Cover dish with plastic wrap and refrigerate minimum 2 hours, preferably overnight.

4. Preheat oven to 350 F.

5. Bake wings 1 hour.

Cooking Tip

Jalapeno Peppers
For milder wings use 3 serrano chilies, for a richer flavor use 3 smoked chipotle peppers, and for a more authentic Jamaican jerk flavor use 2 teaspoons seeded and minced scotch bonnet peppers.

Cooking Tip

Allspice
If you'd like to make your own Allspice combine equal parts ground cinnamon, nutmeg, crushed cloves, and black pepper. Store in a cool, dry place with other spices.
