Hot Braised Wings

Great wings to serve as an entree. Hot braised wings are seasoned, breaded, deep fried, combined with garlic and vegetables and bake casserole style. They have a great tangy taste with a bit of fire.
Ingredients -
 
3 pounds Fresh Chicken Wings, wing tips removed
1 cup All-Purpose Flour
Salt, to taste
Fresh Ground Black Pepper, to taste
2 tablespoons Canola Oil
3/4 cup finely chopped Red Onion
3/4 cup finely chopped Red Bell Pepper
1 tablespoon minced Garlic
4 tablespoons chopped Fresh Parsley
2/3 cup White Wine Vinegar
1 tablespoon Tabasco Sauce
 
Preparation:
 
1. Preheat oven to 350 F.

2. Cut wings apart at joints.

3. In a large mixing bowl, combine flour, salt and fresh ground black pepper.

4. Roll chicken wings in flour, shaking off excess.

5. Over medium high heat, in oven safe, or cast iron skillet, heat canola oil to smoking point.

6. Carefully place chicken in hot oil and cook until golden brown.

7. Add onions and cook until soft. Add bell pepper and garlic. Cook additional minute.

8. Add remaining ingredients.

9. Cover skillet and bake in oven 20 minutes.

Cooking Tip

Blue Cheese Dipping Sauce
In a medium bowl, combine 2 1/2 ounces crumbled blue cheese and 3 tablespoons buttermilk together. Stir in 2 tablespoons mayonnaise, 3 tablespoons sour cream, 2 teaspoons white wine vinegar, 1/4 teaspoon sugar, and 1/8 teaspoon garlic powder until well blended. Season to taste with salt and fresh ground black pepper.

Fresh Chicken Wings
Always check the "use by this date" label on the chicken you buy and be very selective. Make chicken one of the last items you place in your shopping cart, and place it in the refrigerator immediatley when returning home.
