Cajun Chicken Wings

Spciy cajun chicken wings combined fresh cut chicken wings, seasoned with Louisiana hot sauce, garlic powder, and Cajun seasoning mix.
Ingredients -
 
2 1/2 pounds Chicken Wings, separated, and tips removed
3/4 cup Plain Yogurt
2/3 cup Louisiana Hot Sauce
2 teaspoons Garlic Powder
1 cup Flour
1/2 cup Cajun Seasoning
Oil, for frying
 
Preparation:
 

1. Combine hot sauce, yogurt, and garlic powder in a large mixing bowl.

2. Add chicken wings to sauce.

3. Marinate in the refrigerator overnight.

4. Next day, in a shallow bowl, combine flour and Cajun seasonings.

5. Remove chicken wings from sauce.

6. Toss wings in seasoning mixture.

7. Preheat oil in wok, deep fryer, or cast iron skillet to 375 F.

8. Cook wings in batches of 5-6.

9. Deep-fry 8-10 minutes. Drain on paper towels.

Cajun Seasoning
You can make you own cajun seasoning by mixing 3/4 cup salt, 1/4 cup ground cayenne pepper, 2 tablespoons ground black pepper, 2 tablespoons ground white pepper, 2 tablespoons onion powder, 2 tablespoons paprika, and 2 tablespoons garlic powder in a jar. Shake well. Store with other dry spices.

Chicken Storage
Fresh chicken should be refrigerated (place in the coolest part of your refrigerator) immediately when brought into the home. If you wont be cooking the chicken within 24 -48 hours it is best to wrap properly in foil and freeze.
