Buffalo Chicken Wings

Deep fried wings in a mild hot sauce. Seasoned chicken, fried to a delciate crisp, tossed in a mild buttery hot sauce and served immediately. Perfect for any occasion. Just minutes to prepare.
Ingredients -
 
4 pounds Whole Chicken Wings, cut at joint, tips removed
Fresh Ground Black Pepper, to taste
Sea Salt, to taste
Vegetable or Peanut Oil, for frying
4 tablespoons Butter or Margarine
5 tablespoons Louisiana-Brand Hot Sauce or Tabasco Sauce
1 tablespoon White Wine Vinegar
 
Preparation:
 
1. Season chicken wings with salt and pepper.

2. Heat deep fryer to 400 F.

3. Cook the chicken wings in batches. Stirring occasionally.

4. Drain wings on paper towels.

5. In a medium saucepan melt butter.

6. Add hot sauce and vinegar. Heat through.

7. Stir well and remove from heat.

8. Place chicken on serving platter. Pour sauce over wings.

9. Serve immediately.

Peanut Oil
Peanut oil has a higher smoke point than many other oils. It is a very good oil for use in deep frying.

White Wine Vinegar
White wine vinegar adds a tangy bite to this chicken wing recipe. As color is not an issue, red wine vinegar would be a good substitute, otherwise any non-wine white type vinegar would work.
